About Bill

Bill and his Traeger grill

Hi! My name is Bill from Bad Ass Billy's Beef Jerky.

I’d like to share with you a little bit about why I started this business:

1) To leave a legacy to my children and grandchildren.

My four children and 3 grandchildren are the light of my life and I love them very much. A major part of why I felt called to start this business was to to be able to leave a legacy for them.

To my daughter Ann-Marie, my granddaughter Eliana and son-in-law Josh; my son Joesph, his wife Brandy and my grandsons - Anthony and Raymond; and to Isabella - the light of my life, and Christian - my sonshine, I love you all so very much. Even though we’re not in the same place physically, you’re always in my heart and in my prayers.

2) To bring amazing jerky to the masses.

My jerky is unconventional because I DO NOT use any fillers or oils - all natural flavors and ingredients here! This brings out the flavors immediately when you take a bite, plus the heat dissipates quickly from my spicy flavors like the Carolina-reaper-infused ‘Dig Your Grave’. Then my Traeger grill gives it that amazing smoky flavor and tenderness. I dehydrate, marinate, and grill the jerky and its natural ingredients myself.

3) I feel food shows love.

My background is a Chef and I love to cook so this was right in my wheelhouse. How I started my company is I made a coffee infused brisket with a coffee rub, and it was fantastic, so I cut a good sized piece off and made my cuts of a honey teriyaki flavor. It had great flavor, but I didn't like the cut of meat. So I bought top round prime and made another batch and was very impressed this time.

I brought that jerky to work and a full pound of it was gone by mid-morning! The feedback was astonishing. I had co-workers telling me I should sell this because it was so good. I made another flavor called sweat heat and they loved that one too. I thought to myself… “I may have something here!” I created more flavors, and they sold out very quickly with minimal advertising, and it’s just grown from there. That’s how I got started, and I intend to keep going.

My jerky is made with love and creativity, and you can taste it in my jerky. I obsess over my flavors and the experience you’ll have when you take that first bite. It’s a thrill to get feedback and connect with people through food.
